As well as having a work schedule, I recommend that you also have one for relaxation. If you are a housewife, you can plan your time quite well after your husband has gone to work and the children to school. When your housework is finished in the morning, take a break for five or ten minutes. You will be surprised to discover the benefits resulting from such a short rest period. The same relaxation can be observed at midday, and if it becomes habitual, you will build up a store of energy, enabling you to deal with daily problems more easily. Whether you stay at home or go out to work, you will have more opportunity to relax if you do not feel obliged to scrutinise every little item in the daily newspaper whenever you have a break. There is better nourishment available for the brain – things that edify – and it is this you should turn to in order to supply the mind and spirit with food that fortifies. The right kind of upbuilding material will also serve to relax the body, proving the truth of the saying ‘Man does not live by bread alone.’

MISCELLANEOUS TOPICS – EARLY WARNING

I have always been against the spraying or dusting of crops with poison. But if anyone is of the opinion that he cannot do without it, he should at least ensure that it is done in the winter. Moreover, it is important that farmers take their responsibilities seriously and protect their workers and, especially, children from any possible harm. The consequences are not always immediately recognisable, because the chemicals may contain slow-acting poisons, such as copper, lead, arsenic and tar. The modern products, chlorinated hydrocarbon compounds and phosphoric acid esters in their various forms, are even more dangerous, since these poisons do not merely stick to the outside skin of fruit but actually penetrate the leaves and circulate in the sap. It is too late to sound a warning when a farmer or farmworker comes down with lung cancer ten or fifteen years after exposure to poison. Telling him that he should have worn a face mask when spraying his trees will be of no help or comfort to him then.

Never think that the body becomes used to the poisons so that in time they will do no harm. This, unfortunately, is untrue. A quarry worker does not become used to stone dust either and it will be of no use to inform him of the danger he is exposed to when he has already fallen victim to the incurable condition of silicosis. It is certain that this disease will end his life prematurely. It does no good to become careless or complacent as regards obvious dangers, or to lose one’s fear of occupational hazards and neglect to take the necessary precautions.

FIRST THE SMALL, NOW THE LARGE MANUFACTURERS BECOME MORE NATURE-ORIENTED

Forty years go there were not even a dozen health food stores in Switzerland selling natural, unadulterated foods and only very few manufacturers produced such items. It was around that time that Mr Klaesi founded the company ‘Nuxo-Werk’; besides this company I knew of only Messrs Phag in Gland who made an effort to market unhardened natural fats.

Subsequent research and an ongoing campaign of enlightenment have resulted in even larger manufacturers producing unhardened, naturally pure oils and fats, and it is most gratifying to see that substantial progress has been made in the field of fats. In all these necessary innovations, health food stores must continue with their pioneering work, so that in the future they will become even more popular as specialists. However, providing healthy natural and pure food cannot be left just to the health food stores; everyone has a right to be able to obtain such food from his local shops. It is the duty of large companies and manufacturers to rectify the neglect so far shown in this respect, because commercial interests have taken precedence over those of health for too long. However, since oil and fat manufacturers are clearly beginning to see the light, it can be assumed that other food industries will soon wake up too. As far as the chemical industry is concerned, it should stay where it belongs and not get mixed up with the food business! The growing tendency of people to suffer from liver disorders and cancer should suffice as a warning signal to encourage us to remove at least some of the causes that are closely connected with nutrition.

Difficulties in Adjusting to a Raw Food Diet High blood pressure, thick blood, venous ailments and similar conditions, demand a change in the viscosity of the blood and this can be accomplished by following a protein-reduced diet. Meat, cheese, eggs and other protein foods have to be cut down to a minimum in such cases. However, it is not always easy to change over to a fruit diet. Elderly people in particular are likely to be troubled because gastric acid does not always mix well with the acids found in fruit. When changing over to a fruit diet it is of prime importance to eat very slowly, insalivate the fruit and fruit juices thoroughly and eat some crispbread, wholewheat rusks, oatmeal biscuits, toast or any other flakes or wholegrain crackers or biscuits, as the starch contained in them will help to neutralise the acids, rendering them more acceptable to the stomach.

QUESTIONS OF NUTRITION – VEGETABLES AND HERBS (STIMULATING AND ASSISTING)

Dandelion salad, which is rich in vitamins, cleanses, stimulates and assists the liver to do its job. Every spring this delicious salad should be on the table. If you have a garden you can grow your own dandelions. Dig up some roots and plant them in a trench, fill in with compost, forest soil or peat and then dress the top with a layer of pine needles, if available. The roots will soon begin to sprout and the shoots will show their tender green tips. Then remove the pine-needle dressing or peat, cut the shoots as far as the roots, put the cover back on again and leave to sprout anew. This method will give you fresh dandelion leaves for an extended period, in fact, until well into the summer – and if you are blessed with ‘green fingers’ you will be able to obtain a continuous supply throughout the growing season.

DIETS FOR HYPERTENSION, ARTERIOSCLEROSIS AND OTHER SIGNS OF OLD AGE – TREATMENT

A doctor in the United States has helped many people suffering from hypertension by means of a diet similar to the one suggested below. These patients would probably not have been so successful had they tried the treatment alone at home, as the temptation to lapse back into old habits may have been too strong. Through the treatment the high blood pressure was reduced, but with it went a considerable sum of money too.

As a rule, the results of this treatment begin to be seen after 3—4 months. So, if a patient can only spare four weeks to attend a clinic, he does not really have to give up when the time comes to leave, because the experience gained may be used at home and he can continue the regime. Since high blood pressure is usually associated with eating too much protein, patients would be wise to cut out from their diet all animal proteins such as meat, eggs and cheese; if they think they cannot live without these, they should at least reduce the quantities to a bare minimum. In other words, the basis of the diet should be rice, cottage cheese and salads, if high blood pressure is to drop.

The reason rice is of such importance in this diet is that it helps to restore the elasticity of the blood vessels. Soft white cheese (quark) is a good source of protein, goes well with vegetables, especially salads, and is tasty. By adding various seasonings, for example horseradish, curry and all kinds of herbs, as well as vegetable juices, you can enrich its content and taste and provide some variety. Salads, by the way, supply the body with the necessary vitamins and essential mineral salts.

DIETS FOR HYPERTENSION, ARTERIOSCLEROSIS AND OTHER SIGNS OF OLD AGE – INTRODUCTION

It is important to determine whether hypertension, or high blood pressure, is caused by a kidney disease or by the diminishing elasticity of the blood vessels. If the latter, it may be easily corrected through a rice diet, as this is effective in practically all diseases attributable to the aging process. Rice is a medicinal food, which provides surprisingly good results, but you must be sure to use brown unpolished rice, for this is more beneficial and valuable than the more common refined white rice. If you cannot obtain brown rice, although this is unlikely, two commercially prepared rice packages, ‘Uncle Ben’s’ and ‘Avorio’ may serve as a compromise, because both of these brands still retain many of the important minerals found in brown rice.

It is not easy for everyone in countries where rice is not produced to stick to a rice diet. In many areas people are used to eating mainly potatoes and local cereals, but in the Far East rice is a staple food. In this respect people in Far Eastern countries are better off, for if they adhere faithfully to the simple brown rice diet of their forefathers, they will never have to worry about high blood pressure.
